Spicy Vegetable Yaki Soba Noodles

Spicy Vegetable Yaki Soba

Serves 1

Ingredients
1 teaspoon olive oil
1 ounce carrots, juliennes
1 ounce snow peas, juliennes
1 ounce green cabbage, juliennes         
1 ounce yellow onion, juliennes
– ounce red pepper, juliennes
– ounce green onion, juliennes
4 ounces soba noodles
2 teaspoons fresh chopped cilantro or Thai basil leaves 
2 teaspoons soba sauce

Procedure
1. Heat saut– pan with oil until light haze forms.
2. Stir-fry vegetables until heated through.
3. Add soba noodles and toss until heated through.
4. Add cilantro and sauce.

Soba sauce
Ingredients
1– cups chicken broth
1 teaspoon soy sauce
2 teaspoon sugar
1 teaspoon fresh garlic 
2 teaspoons oyster sauce
2 teaspoons fish sauce
2 teaspoons ketchup
1 teaspoon Thai Sriracha hot sauce
3 teaspoons honey
1 teaspoon grated fresh ginger

Procedure
1. Combine ingredients over medium heat.
