Dry-rub barbecued salmon with summer tomato, sweet bell pepper and cucumber relish

(Serves 4)

Ingredients:

For relish:

1 medium-ripe red tomato, seeded and diced
1 whole green onion, trimmed and thinly sliced on the bias
– small yellow bell pepper, stemmed, seeded and diced
– English cucumber, seeded and diced
1 teaspoon minced fresh cilantro
1– teaspoons freshly squeezed orange juice (about – orange)
1– teaspoons red wine vinegar
1– teaspoons extra-virgin olive oil
Salt and freshly ground black pepper, to taste
Granulated sugar, to taste
