Ingredients: 1 (2-3 pound) Flat Iron Steak 1 ½ cups Tequila ¾ cup Lime Juice (approximately 3 limes) Zest from 1-2 limes 3-4 cloves fresh garlic, minced 1 tsp cayenne pepper 1 tsp ground cumin 2-3 tbsp liquid smoke 2 tbsp Honey (Brown Sugar may be substituted) ¾ cup chopped fresh cilantro Salt and Pepper Procedure: Trim excess fat from the steak and lightly score it with a knife in two directions to create a cross hatch pattern, repeat on both sides.
